This delicious beetroot and berry puree/smoothie is wonderful for young and old alike. A nutritious smoothie for busy families on the go.
1 medium raw beetroot
1 tbsp. fresh ginger
½ cup apple juice
1 cup frozen mixed berries
1 kale leaf
Peel ginger and beetroot, blend ginger and beetroot in blender (blend a bit more than you think is necessary, the key is to get them smooth), de-stem kale and add it to the other ingredients in the blender. Serve.
This recipe is perfect for adults and kids.
