Purple Carrot Treat

Purple carrots contain beta-carotene (a cancer-fighting antioxidant), they also contain anthocyanins, the flavonoid pigments responsible for the purple colour, and which have antioxidant, anti-inflammatory, antimicrobial and anti-carcinogenic properties.

Ingredients:

1 purple carrot steamed

½ cup frozen mixed berries

¼ cup coconut cream

Method:

Allow berries to defrost slightly, place all ingredients in the blender.

Will fill just over 1x 140ml Kai Carrier.

Optional: Add a banana or stewed pear to make it sweeter if necessary.
