Super Healthy Brownie Waffles

You can top this breakfast with chocolate chips and some flavored yogurt or go traditional with maple syrup and butter. (Or try peanut butter and applesauce!) They are a really great way to start the day. 


1¼ cups whole wheat flour

½ cup cocoa powder

2 tbsp. sugar (optional)

1 tbsp. baking powder

½ tsp. salt

2 eggs

1¾ cups milk of choice

¼ cup butter, melted

¼ cup plain yogurt

1 tsp. vanilla

Chocolate chips, raspberries, yogurt to top (optional)


In a medium bowl stir together flour, cocoa powder, sugar, baking powder, and salt.

Make a well in centre of flour mixture; set aside.

In another medium bowl beat eggs slightly; stir in milk butter, yogurt, and vanilla.

Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be slightly lumpy).

Pour 1 to 1 1/4 cups batter onto grids of a preheated, lightly greased waffle baker (use a regular or Belgian waffle baker). Close lid quickly; do not open until done.

Bake according to manufacturers directions. When done, use a fork to lift waffle off grid. Repeat with remaining batter. Serve warm.
