Apricot Chicken

Having Apricot Chicken for dinner? Follow this recipe to ensure your baby can enjoy it too…in puree form!


  • 1 small chicken breast
  • 1 cup chopped kumara
  • 1 cup water
  • 2 fresh apricots or 3-4 dried apricots
  • 1 tbsp. olive oil


Heat olive oil in a saucepan and add diced chicken pieces. Cook for a few minutes until chicken is sealed and brown. Add water, kumara and quartered apricots (stone removed). Bring to the boil then simmer on reduced heat for 15-20 minutes (or until apricots and kumara are soft). There should only be a little bit of water left.

Pour all ingredients into the blender and puree until smooth.
