Carrot Vege Puffs are great as a lunchbox filler.
One cup grated carrots
One cup grated zucchini
1/2 cup finely diced onion
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup milk
1/4 cup grated Parmesan cheese
1/2 teaspoon parsley (fresh or dried)
4 Tablespoons flour
Combine the vegetables, salt, and pepper in a bowl.
Beat the eggs in a bowl. Stir in the milk, grated Parmesan cheese, and parsley. Add the flour and beat well to make a batter.
Add the vegetables to the batter and mix well.
Heat oil in a pan on the stove.
Cook spoonfuls(large or small) in the pan until golden brown on both sides.
Pat dry on paper towels.
Serve warm, store in the fridge for later, or put in a lunchbox.
